Your assessment was spot on and you informed me what I suspected as well as what I secretly feared - in that I’d have to cut out most, if not all, forms of carbs in order to reverse the rising levels of blood sugars in me.
What made me switch immediately was your following comment "Your body is kinda screaming now. It can't handle the glucose intake. It can't metabolise it. Your pancreas is working abnormally hard to produce more insulin to deal with the sugar - but even then, you already have excess glucose not only in every cell of the body, but also in the bloodstream because glucose has nowhere else to go.” This is the type of comment we sometimes need to jolt us out of our stupor and perhaps the “happy place” we’re in, all the while thinking we can continue on the present path. After all, "what’s wrong?" with a little potato chips late at night, or some dried fruits during any time of the day, or even those burgers with fries.
I am glad my wife was able to quickly join my healthy very low carb bandwagon; I guess I am lucky of sorts as I am the main cook in our home and I manage to make awesome but healthy keto meals in a jiffy.
